Based in Bushmills, Northern Ireland, The Sexton brand emerged two years ago under Alex’s leadership. Her journey at Bushmills began in 2004, where she gained expertise in distillation and maturation. Named after the role of a caretaker of precious items, The Sexton is a testament to Alex’s vision of crafting something unique.
Drawing inspiration from the rich history of Irish whiskey and her deep-rooted passion for innovation, Alex embarked on a journey to create The Sexton Single Malt Whiskey. Her mission was clear: to craft something that would push the boundaries of whiskey-making.

To achieve this ambitious goal, Alex turned to the magical allure of Spanish Oloroso sherry casks that she hand-picked. Alright, let’s get into this food and whiskey pairing we’ve got lined up. I whipped up some dumplings, boiling them in water with chicken broth for about 6 minutes, then giving them a quick fry in olive oil for another 6 minutes. Nice and crispy!

As the dumplings were ready, I quickly laid them out on a piece of kitchen paper to soak up any excess oil. Next, I whipped up a quick burger sauce with ketchup and mayonnaise, mixing it up in a 60/40 ratio.
With everything prepped and ready to go, I started off by eating a dumpling and taking a sip of The Sexton. Initially, I thought this pairing might work because the black pepper aftertaste of the whiskey seemed to complement the dumpling. But then the strong aftertaste of the whiskey kicked in, and it was a bit overpowering.
So, to balance out the Sexton’s power and the food, I dipped the dumpling in the sauce. And you know what? The sauce made everything better. It was like the fury brought by The Sexton was calmed by the heaviness of the sauce.
